South Melbourne Market patisserie stall

It is the handiwork of Agathé Kerr, a professional pastry chef. She learned her trade at what is essentially the Harvard of patisserie – the École de Boulangerie et Pâtisserie de Paris. And those skills are hidden away back in Melbourne, either. Agathé bakes in an open kitchen, giving the stall an air of theatre.

Agathé Patisserie may have a classical French baking education behind it, but it’s the innovation that stands out. There are several authentic cakes, savouries and pastries, but Agathé happily rips up the rulebook in pursuit of a fun idea.

Options on sale, therefore, include infused croissants. These croissants have been infused with flavours such as café au lait, pandan or matcha. Agathé Patisserie also sells cruffins, which are somewhere between a crumpet and a muffin. Flavours on sale include peanut caramel, Nutella and salted caramel.

Agathé Patisserie baguettes

This wouldn’t be a true Paris-inspired bakery without the range of baguettes, however. Some are steadfastly traditional, but others have that spirit of experimentation. So, you can buy a honey and sesame baguette. Or and olive and garlic baguette. Or even a chocolate chip milk-bread baguette.

Agathé Patisserie is stall number 63 on Aisle B of the South Melbourne Market.
